EASIEST ACORN SQUASH SOUP EVER
Preheat Over 400 degrees
Cut 2 Acorn Squash down the middle
1 Onion, cut
Season Acorn and Onion with olive oil (1 tablespoon will do, but 2 is OKAY)
Garlic, Salt and Pepper
Lay the Acorn Squash, cut side down on baking sheet (line sheet with foil)
Lay cut up and seasoned onion on the sheet.
Bake 45 minutes to and hour.
Spoon inside out into a blender with 1 cup of milk and 1 cup of water. To make creamier substitute 1 cup of water with another cup of milk.
1/2 tablespoon of cinnamon to taste.
Blend all together
Reheat when ready to serve.
